The icing is on the cake for Mervyn
Birthdays have come and gone for Mervyn, but the one constant for 70 years is the beautiful cake baked to celebrate the occasion by wife Helen.
That includes the large sponge cake Helen recently baked with 96 candles and delivered to him at Bolton Clarke’s Cabrini residential aged care community, where he has lived for the past 18 months.
The cakes have been a constant in Mervyn’s life - and even COVID-19 restrictions could not stop the delicious dessert from marking his special day.
Helen, 88, is happy to share the recipe to Mervyn’s happiness with baking enthusiasts.
“It comes from this old cookery book from the CWA - it’s our 70th wedding anniversary this year and it’s my husband’s favourite recipe, so I will bake it again,” she said.
“He loves the taste of it! I used to decorate it with cream and strawberries but now I put sprinkles on it instead.
“For my birthday last year, he ate four pieces before I knew it!”
Mervyn has his eye on an even bigger target – his 100th birthday in four years. As always, he hopes to celebrate the milestone with home baked goods.
“He says ‘only four cakes to go then I’ll be 100’,” Helen said.
